The problem is lack of developer resources. There already is Trisquel
Mini which is the LXDE version and Triskel (KDE) is available via the
netinstall. The latter is a bit rough around the edges but
aklis/santi mentioned he and other(s) working on an ISO to me.
Speak to Aklis on IRC if you want to help with any of those (Gnome
Flashback[Trisquel], LXDE[Trisquel Mini] or Triskel[KDE]).
